For Christmas dinner with the family, we normally do potluck! This year we were assigned to bring the roast beef. So, of course, we choose only the best! This is a new arrival from Bryan Flannery specially for the holidays.
Slow defrost in the refrigerator a day or two before cooking. An hour or two prior, leave it at room temperature
James called Raffy to ask how to cook this since we never made one! He did not only tell us how, they actually came over to help us out!!! THANKS GUYS!!! James was panicking!!
Ingredients
James bought this new gadget, a digital meat thermometer, to get the temperature of the beef
Raffy patted it dry with paper towel
Special tip: Have your butcher remove the meat from the bone and then tie back the meat on the bone
Coat with oil – olive oil or canola oil
Spread the oil
Season with kosher salt and freshly ground pepper ( Thanks Gaita for the Peugeot grinder )

Garlic and fresh rosemary
Cut incisions into the roast approximately one inch deep
Insert the garlic and rosemary into the holes- around 5 to 6 cloves all around the roast for a 4 rib ( 9 pound roast)
Sear all sides of the roast for a few minutes
Then the key is to stick in the thermometer and slow roast at 250 degrees fahrenheit which is approximately 30 minutes per pound. The objective is to get internal temperature of 130 degrees fahrenheit
After around 4 hours or roasting…the finished product

A few days after the wedding of Alexis and Bambi, was Alexis’ birthday! And of course, thoughtful wife, Bambi, prepared a lunch for Alexis. What a lucky guy! 🙂

We had our last get together for the year with the gang and we did potluck again 🙂 Seems like everyone had a good year with lots of blessings and lots of things to be thankful for……most importantly our strengthened friendship!

After touring Belenismo, Tita Isabel and Isa took us out for dinner!!
They wanted to take us to their favorite ( Nay’s House, Tarlac January 2, 2009) but they were busy for a catering. So they took us to Coconut Grill. Thank you for hosting our visit to Tarlac! We enjoyed ourselves and we are deeply honored to be your guests! We love you!

Growing up in the shoe capital of the world, designer Franco Sarto realized early in life that he was destined to become a shoe designer. Born in 1949 Sarto moved from his birthplace of Dolo, a small town outside Venice, to Stra, the center of shoe design in Italy. At Stra, Sarto first ventured into the business by opening his own studio with a co-designer, making their works available to the public for the first time.
With a background as a cobbler, Sarto’s knowledge of crafting footwear combined with an aesthetic awareness makes him a unique talent in the industry—one imbued with skills both in the technical and creative side. Renowned for his hand-drawn designs, every initial sketch translates into a truly comfortable work of art that appeals to fashionable women from around the world.
For his Fall/Winter 2010 collection, Sarto take inspiration from the streets of the world’s more stylish cities. “I’m always inspired to design for the stylish women I see on the streets in fashion capitals all over the world—Milan, New York and Paris,” says Sarto. “My fall collection is centered around this idea of urban chic—clean and sharp silhouettes, effortlessly chic and easy to wear.” The collection boasts of a classic color palette of cool grays, black, whiskey, taupe, stone and red for a pop of color.
Sarto’s latest designs marry tough with romantic elements. “I was heavily influenced by the military trend that we saw on Fall runways,” he explains. “Antiqued leathers and oiled suedes are applied to flat, ankle and over-the-knee boots with lacing detail or heavy hardware—zippers, buckles, and studs. Riding boots and oxfords pay homage to menswear, but with a vintage take.” On the other hand, Sarto applies feminine elements to round-toe flats and platforms, by way of contoured detailing or touches of exotic prints and suedes.
“This balance of fashion, quality and wearability—this is what turns a shoe into a work of art.” With an eclectic selection to choose from, women can step into Sarto’s boot and oxford styles for a touch yet elegant look or slip into a pair of classic heels or flats for softer, feminine style.
