Chie Gatchalian gave a short talk on wines and wine pairing

1. Salty food- pair with full bodied, tannic wines (ex. Cabernet Sauvignon); salt in food softens tannins in wine

2. Fatty or fried food- pair with a dry, acidic white wine (ex Sauvignon Blanc); acid cuts through the grease lessening the “umay” factor

3. Savoury or Umami rich food- pair with a fruity wine (ex Beaujolais nouveau) to complement the “linamnam” in the food and not overpower it

4. Sweets/Desserts- pair with sweet wines to perfectly match it.

5. Mildly spicy food- good with sweet wines or juicy wines to counteract the spice (ex Riesling).
