This is one of his signature dishes which he invented. He usually serves this in most of his degustations. Raclette with marbled potatoes baked in goose fat, with Jamon and onions

Great job Javier! All of the dishes look really delicious! And yes, you truly do make a fabulous bernaise sauce. Hopefully one day I can try your french onion soup since this is one of my favorite dishes. Hope all is well!
