I don’t remember this dish in my Lola’s house but anyway she made this

Assumption Meat! YUM!!!
It is called Assumption meat because according to Mom, this was the dish that was always served in the Cafeteria or if you were a border at Assumption. But I guess this is just tapadera. I have not tried the one in Assumption, so for me, this is the BEST so far
