Oliviers & Co had a booth in Madrid Fusion. It’s a French brand but it has some olive oils from Spain. Stop by and sample them. Check out Affiorato ( rising from the surface) La Premiere Huile from Spain by Oliviers & Co. This Extra virgin olive oil uses an ancient way of extracting extra virgin olive oil – They crush the olive a little and wait for the oil to rise. It is no longer being used as a technique because it’s labor intensive and it’s difficult to make a big batch. So this is a limited edition product til supplies last.
