Marketplace by Rustan’s is putting the spotlight on its wonderful cheese selection with an exciting Cheese Festival from July 29 to August 7. The premier supermarket known for offering top quality products sourced all over the world, will also be showcasing an array of specialty cheeses available at its branches for a limited time for consumers to taste and try.  We were able to sample all 8 and they were all delicious!
Cheese, a most versatile and well-loved food, is a staple in every home. In fact, it’s an ingredient in a majority of our comfort favorites. The delicious dairy isn’t just flavorful, but it’s nutritious too, being a good source of calcium and protein. So why do we keep sticking to the same few kinds?
Well, admittedly, standing by the cheese section of the supermarket and trying to choose what to purchase can be intimidating. There are literally thousands of different kinds of cheeses—so many that we wouldn’t be able to name them all. But there’s always going to be a cheese for any dish or occasion. A quicker and easier way to explore and discover what you prefer would be to go by category and flavor.
Hard cheeses are the most common kind, and it’s the category of the most popular cheeses such as cheddar and Parmesan cheese. These are cheeses of the saltier variety. Semihard cheese is the largest category, and includes Sage Derby
and Guinness Beer Cheddar. Soft cheeses are creamy and often fresh or unaged.
Goat cheese and brie are some well-known examples.Chef Jonas Ng renowned chef and self-professed cheese aficionado from French restaurant Le Jardin and founding member of Chefs and Foodservice Community of the Philippines shares that knowing the kinds and categories of cheeses helps you appreciate the food in the proper way.
And how better to indulge in cheese than a cheese board? Chef Jonas dishes on some guidelines for us to create a beautiful one perfect for home entertaining.
As any expert will tell you, variety is key when composing a cheese board. “Include a cheese from every category to balance the flavors,” he says. “You can start with what you know and pick out an aged Parmigiano-Reggiano, then balance out the texture of that hard cheese with a cream St. Marcellin or goat cheese with herbs. Having different colors, shapes and sizes also enhance presentation.”
A cheese board isn’t complete without a blue cheese – with the “blue” referring to the blue veins which results from the cheese being inoculated with mold and allowed to age. It may sound a bit sinister but blues pack some strong flavors. Chef Jonas gives a great tip, “The Cambozola is a brie-style blue cheese from Germany that’s definitely worth a try.”When it comes to serving, Chef Jonas reminds us to “Be sure to let the cheese breathe, and serve it at room temperature. So allow yourself between half an hour to 1 hour to take the cheese out of the fridge before serving. A great way to keep it from drying out is to cover lightly using a slightly damp towel.”
Complete your board with sweet and salty accompaniments. “You can totally have fun with this and put in a combination of assorted crackers, artisan breads, and mini toasts, plus savory marinated sun-dried tomatoes, olives, or meats like prosciutto and salami,” Chef Jonas points out. One of the best cheese accompaniments is fresh fruit, so include apples, pears and grapes, and even seasonal ones for enhanced flavors.
The best advice Marketplace by Rustan’s and Chef Jonas can give about cheese? “Don’t be afraid to try. It may look and smell funny, or have some difficult name to pronounce, but try it anyway. Who knows, you might just love it.”
A cheese buffet was set up and we were given wooden trays to put the cheeses that we liked with its accompaniments of fruits or crackers.Â
