Happy to meet Head Sommelier – Rafael Santos – who is Filipino. Raphael but changed to Rafael by the Italians and Pepel was his nickname in the Philippines. 🙂 Pepel graduated from Fordham Univ and worked in the field of Finance in Wall Street, London and San Francisco for 4 years and realized that it was not for him. He became a Sommelier and has been working in Acquerello for 7 years already. Though he said that he learned to appreciate wine during his meetings in his previous job. Pepel is such a nice guy and it’s nice to know we have many common friends- one of them is Chef Tippi Tambunting of @m_dining.bar and @donosti_pintxos More power to Pepel ? An off the menu dish but regulars know this dish. Yum! Acquerello Risotto Ridged pasta with foie gras, black truffle and Marsala – this was in the Tasting menu but we requested if we could have it as one of our courses and they agreed 🙂 Maine lobster Pancetta wrapped Venison Grilled swordfish Bourbon caramel semifreddo White truffle gelato at @acquerellosf YUM! Accdg to Pepel @pepelsantos this gelato was created because of an accident. Someone in the kitchen put the white truffles in the freezer and to try to rectify the mistake he told Chef Suzette he will make it into gelato! Ever since then it’s being served when truffles are in season Love this cart!!! Petit fours all you want!!! the Seasonal Tasting menu that looked so good but we knew we would not be able to finish A gift in a box for each diner.
