Happy to meet Head Sommelier – Rafael Santos – who is Filipino. Raphael but changed to Rafael by the Italians and Pepel was his nickname in the Philippines. 🙂 Pepel graduated from Fordham Univ and worked in the field of Finance in Wall Street, London and San Francisco for 4 years and realized that it was not for him. He became a Sommelier and has been working in Acquerello for 7 years already. Though he said that he learned to appreciate wine during his meetings in his previous job. Pepel is such a nice guy and it’s nice to know we have many common friends- one of them is Chef Tippi Tambunting of @m_dining.bar and @donosti_pintxos More power to Pepel ? An off the menu dish but regulars know this dish.
