I made sure this time that we would try the BEST PIG EVER! 🙂  I tried Zubuchon when Mom brought home to Manila some.  But I wanted to try it first handÂ
Since Maya was closed, we took the opportunity to choose another place we wanted to go to! Â It was already 2pm and we were so hungry!

We didn’t beat around the bush and just tried what we came for!  Love the presentation 🙂
We source our pigs from backyard raisers all over the province, are fed 100% organic feeds a week before they are cooked to totally cleanse the pigs’ systems. “Zubuchon” is stuffed with more than a dozen herbs and spices, the pig’s skin is “acupunctured” or pricked all over, then sprayed with fresh coconut water. These processes result to a crispy and brown skin once roasted. No MSG nor soy sauce are used.
The lechon is roasted over charcoal, using bamboo poles.
ZUBUCHON is coined from the words ZUBU (Cebu’s name in old Spanish maps) and LECHON
It was really good!! Though the skin was not so crispy anymore. Â It was our fault for eating a late lunch. Â According to our waiter, the best time to come is when the lechon arrives which is around 1130am for lunch – since we came and ate at almost 230pm, it was not crispy anymore. Â Nevertheless the taste was really really good! Â Â
Our waiter Henry was great! Â We told him about crispy skin….
And he gave us extra skin that was actually crispy! Â YAHOO!!!

Rica, Thanks for posting. this looks crazy good. I’ll definitely know where to go the minute i go to cebu! Have you heard of tico’s kitchen? It’s also in cebu–saw pictures their page in FB posted and their desserts looked amazing.
