Celebration of Filipino Cuisine at Town & Country’s First Fabulous Food Affair

 Imagine this spectacular feast before you: meat from crabs specially flown in from Butuan served with ubod with a sauce of aligue and pumpkin,

 a leaf-wrapped dish from Sorsogon made with buko,

freshwater shrimp and mint, organic baby back ribs from Faith Farm in Bacolod, grilled whole maya maya wrapped in pandan leaves with traditional burnt caramel sauce; and for dessert, bibingka made with heirloom rice from Nueva Ecija and tarts made with chocolate from Davao.

This was the wonderful spread at Town & Country’s first ever Fabulous Food Affair last November 15. As Editor-in-Chief Yvette Fernandez put it, “Food is a direct link to home, it is visceral and it something you can appreciate with your five senses.” And the Fabulous Food Affair was truly an experience for all five senses.

Held in Aracama, Bonifacio Global City, with its modern hacienda-style interiors, the venue was perfect for Chef Romy Dorotan and Amy Besa’s Fabulous Food Affair aptly titled, “Brooklyn meets Bicol, atbp”,

Chef Romy and Amy are known for their critically acclaimed restaurants, Cendrillon in SoHo, and Purple Yam, in Brooklyn as well as their best-selling book, “Memories of Philippine Kitchens” – which offered a fascinating – and personal – look at Filipino cuisine and culture.

The event was in support of Amy’s Ang Sariling Atin Culinary Heritage Institute, which hopes to rediscover and preserve the palate of Filipinos and go back to basics with the use of traditional Filipino kitchen ingredients and methods to create and uphold heirloom recipes. Town & Country Philippines is delighted to have had the opportunity to support Ang Sariling Atin.
