I always wondered why bangus belly is not really bangus belly when you buy those packaged ones in the frozen section of the supermarkets. The belly is there but there is so much meat around it still. But I recently found just the BELLY! There are two vendors at the Salcedo market. They sell two kinds and call the pure belly “Bangus Belly PREMIUM.” Claudel Foods ( Tel# 438-4856 / 912-1153) pack of around 8 pcs for P 170.00 and Yvan’s Seafoods ( Tel #:571-0741 or Mobile # 0917.880.9578 ) pack of around 4 pcs. for P 110.00. I do not even check the weight, i just get it because it is so valuable and rare to find! But the girl says it is around P 420 to P 400/kilo. They are in the same row in the market and have styros and styros of frozen seafood inside. Problem is, for the past 3 weeks, they have not had stocks. So, good thing when i first went there I bought all they had.
There is another vendor in the same row but it has a little meat around it – but still much less than what you find at supermarkets and they usually have stock – Picky Moms Trading ( Bonuan brand ). It has proper packaging and is BFAD approved. It costs around P 130.00 for about 5 pcs. They can also be found in Market Market at the Fiesta market.
The packaged one in the supermarket costs around P 140.00 to P 200.00 and it usually comes with 1 or 2 bellies only and it has a big portion of meat. So, I thought that my finds were a very good buy.
My two dads like this so I thought it was a great discovery. Now they can really feast on just the belly and not worry who will have to eat the surrounding meat 🙂

About a year ago, we bought our first panini maker. It is such a great machine because it is so easy to just pop in any sandwich inside and make it into a panini.
We even prepared a panini buffet lunch in one of our Sunday family lunches that we hosted. It is easy to prepare plus everyone gets to make their own panini.
Our panini station had:
Vegetables: lettuce, mushroom, salad tomato, grilled red and green peppers
Spreads: reduced fat mayonnaise, regular mayonnaise, pesto, garlic anchovy butter, garlic parmesan butter, butter, olive oil, Nutella
Deli: bacon, pastrami, turkey breast ham, chicken ham, country ham, prosciutto, Jamon de Cagayan, Swiss bacon ham
Cheeses: Gruyere, Fontina, Provolone, Mozzarella, cheddar and quesong puti
Bread choices: whole wheat slice bread, plain slice bread, foccacia, pandesal, ciabatta
Other fillings: tuna flakes, corned beef, adobo flakes
potato chips or french fries for sidings

I scouted around also for Ciabatta bread and these are my finds: Le Couer – P 25.00 each, Deli France -P 125.00 for a pack of 5, S & R has it for around P 70.00 for a pack of 5 and in Salcedo market, a bread vendor sells it for around P 70.00 also for a pack of 5. I recently discovered in French Baker mini ciabattas ( P 54.00 for 16 pcs. ) which is perfect for me because I like my sandwiches small. They even have it in whole wheat ( P 60.00 for 16 pcs. ) . Their regular ciabatas are square in shape and not rectangular like the others.
I also pirated a panini recipe from my cousin, Ria. She made for us this Pesto Panini which had pesto, pecan nuts and gruyere cheese. So simple to make and so yummy. My pesto version – chopped fresh basil then add olive oil, parmesan cheese and salt. Spread a lot of it on the bread, add the pecan nuts ( a few pieces scattered ) and then add the gruyere cheese. I particularly prefer gruyere as suggested by Ria. TRY IT!

These two chocolates are sooooo yummy. It bothers me that it is so hard to find even in the major cities of the world. Luflee has a unique texture and the inside is a light airy filling and me and my sister discovered it in Spain. Ovomaltine is exactly like the chocolate milk Ovaltine but in a chocolate bar and I discovered it in Switzerland. So other than those places, it is very hard to find them. Luflee you can order online at Germandeli.com which is an American based website, so they only deliver to US addresses. The fact that you cannot get them often makes you crave for it even more!!! If not for my sister in law, Tina, we would not have the luxury of eating these yummy chocolates. Don’t ask me where she finds them…..
Michele introduced Vincenzo Paini, an Italian Chef, to her friends and family by sampling around 12 healthy Italian dishes at her beautiful home. Everything was delicious!! There will be a series of cooking and wine tasting classes conducted by Vincenzo with the help of Michele. Thanks to Michele for making Vincenzo feel at home in our country and for helping him kickstart his cooking classes.
