Pamana The Legacy of Dr. Bienvenido R. Tantoco Sr. – Jose Rizal University Graduate School of Business

Lolo turns 94 today and in celebration of this is the renaming of the Jose Rizal University (JRU) Graduate Program in Business as the Dr. Bienvenido R. Tantoco Sr. Graduate School of Business. This is Lolo’s “Pamana” to the school that gave him a college degree for free when he could not afford it. Thank you to the founder, Dr. & Mrs. Armand Fabella for giving our Lolo that opportunity and making him the person that he is today. March 31, 2015, marks a special day in the history of Jose Rizal University

In celebration of this very momentous occasion there was a formal ceremony held at the library of Jose Rizal University in Shaw Blvd.

We were serenaded by a very pretty lady Nicole Ascencio Laurel, Former lead vocalist of the band, General Luna. What a beautiful voice! A woman who comes from a family of musicians. Her grandmother, Fides Cuyugan Asensio is a coloratura soprano opera singer. Her mother is Iwi Laurel, a top record-selling and award winning singer. Her uncle is no other than the theater artist, Cocoy Laurel. NO WONDER!

I am hoping that one day we can all share that with you if ever my cousin, Donnie, can make that book. Laksa Night

It’s been a year since we’ve launched our Youth With A Future initiative, with Chef Alain Ducasse himself leading the first charity dinner to raise funds for Tuloy Foundation Inc’s culinary students. Since then, we have successfully trained and placed in internships the 10 bright culinary scholars. Today, we are proud to update you of their progress: 4 are still employed by the Four Seasons Jumeirah in Dubai, 2 are still with Chateau 1771, 2 are with Vask, and 2 are with the L’Opera Group now assigned to Prego, the newly opened restaurant in City of Dreams. All are making us proud with their performance at work – their superiors are in fact asking Chef See to send more graduates! For more updates, please visit www.youthwithafuture.ph

We are hoping to raise enough funds to train another batch of at least 10 scholars this summer. The goal is to get these former street children employed by the end of the year. There will be a Laksa Night on 15 April (Wednesday) where Chefs See and Marc will be cooking a simple yet sumptuous 4-course dinner for only PhP 2,500 per person.

Market Menu at Enderun Created By Our Very Own Alumni Chefs

Back at Enderun which has become so much a part of Heart2Heart. Heart2Heart has many friends that are family already here in the website. H2H loves all the people at Enderun 🙂

This time we had a cooking demonstration and a dinner 🙂

There is the Big Boss at Restaurant 101, Chef Thomas waving 🙂

So happy to see rockstar Chef Thomas Wenger last night!! Almost every year he invites me over and updates me on what he is doing at Restaurant 101 in Enderun. He is the Managing Director of Food and Beverage and a Senior Culinary Lecturer at Enderun. This guy is so accomplished yet he remains simple and humble! He is well respected in the food industry not only in the Philippines but all over the world by renowned chefs. I am so privileged to know him. He has been a chef for 30 years already! He is Swiss so he started in his own hometown, then later on moved and worked as Sous Chef in New York and Australia. He then moved to Hong Kong in 1991 as Sous Chef at The Excelsior, The Mandarin Oriental Hotel Group and in 1992 moved to The Oriental in Singapore with the same Mandarin Oriental Group. In 1995 he came to the Philippines and was Executive Sous Chef at the Shangri-La Hotel Manila, moved again to Hong Kong in 1997 as Executive Chef of the prestigious Hong Kong Jockey Club and then in 2001 Executive Chef of the Le Royal Meridien Bangkok & Le Meridien President Bangkok. In 2003, he went back to the Philippines as Executive Chef at the Mandarin Oriental till 2008 and then moved to Enderun College. Chef Wenger also has a recruitment company and provides employment for chefs to many of the best hotels and restaurant. Chef Thomas was very excited to announce that the new market menu which will last for three weeks at Restaurant 101 was prepared by his chefs. Usually it is he who prepares the menu and they just follow. But this time, he let his chefs come up with the menu and prepare it. What great idea! Chef Thomas also told me that he likes hiring the graduates from Enderun so that he can help jumpstart their career and also so that the first entry in their resume will show that they worked in the school where they graduated from. ????

So come on over and try the new Market Menu ???? prepared by the Enderun Alumni. This will go on for about three weeks. You can choose to have a 2 course for P 780.00 or a 3 course for P 980.00 or a 4 course for P 1,180.00. That evening we went to the Culinary Ampitheater ( WOW!) of Enderun and three Enderun Alumni’s demonstrated three dishes from the new Market Menu. So we did not only get to eat it, but we saw how they made it 🙂

Chef Marco Bangit started with the delicious white bean soup! I am not a big fan of beans, but this dish was just so delicious!!

Chef Justin Baradas demonstrated the salmon dish which was so unique he coloured it pink 🙂 it looks like Tuna 🙂 Delicious!

Chef Penny Pedersen demonstrated the Layered White and Dark Chocolate Mousse with Betterment ice cream. SUPER YUM!!! Love the presentation too

Parent’s Weekend

For the three years that Jaime has been in boarding school, this is our first time to attend Parent’s Weekend. It’s Autumn and its beautiful in the campus

Mr. Rodriguez 🙂 The Adviser of Jaime and at the same time his Spanish teacher. We were happy to see him again and get to talk to him

Beautiful architecture – Chapel of St. Peter and St. Paul at St. Paul’s School Concord, New Hampshire In the spring of 1856. . .
a young schoolteacher arrived in a carriage at a large property of ponds and woods near Concord, New Hampshire, where a wealthy Boston physician had provided land to create a new school. St. Paul’s began that same day, as three boys received their first assignments, one of which was to go fishing. A love of the School’s natural habitat has remained constant since those early days.
Graduates of St. Paul’s School have included three candidates for U.S. president, six senators or congressmen, 13 U.S. ambassadors, and 10 leaders of various U.S. administrations; a governor of New Hampshire; a Nobel Prize winner, a Medal of Honor recipient, three Pulitzer Prize winners; a mayor of New York City; a president of the World Bank; numerous editors of books, newspapers, and magazines; CEOs of numerous Fortune 500 companies; professional hockey players; and multiple clergy, including the former presiding bishop of the Episcopal Church

Everyday all the students gather at the Chapel of St. Peter and St. Paul ( not Catholic) for morning chapel as part of their objective to have a holistic education. They have reflection, talks from speakers of the school, hymns and other activities

We simulated all the classes of Jaime and went to all his classrooms and met his teachers. I like these notes from Photography class

At Math class! For some reason, while waiting to enter the class, I particularly looked at the scribblings on the glass and after looking closely, I saw something which caught my attention!!! A HEART!

I looked closer and realized it was me!!! A drawing by Jaime, my son! Just seeing this made our trip all worth it.

Happy to see Chananya and Prasong in the same Math Class where our sons are classmates 🙂

In Math class, they do not put their real names on the test papers just so there are no biases and preconceived notions when the teacher checks the papers. Interesting! 🙂 Jaime just put his name already after and this was given to us to view

Another lunch at school. The tables were assigned by house/dorm. That way the parents get to meet the other parents of the dorm mates 🙂 Good idea 🙂

Back at the beautiful campus of Jaime. This time it’s Autumn.

and preparing for Halloween

Jaime is a prefect in his dorm which means he is in charge 🙂 He is responsible for the other kids in the dorm.

He has a new roommate every year and this time it’s Charley

Being a prefect and being a seniors has its perks 🙂 He has a bigger room 🙂 which becomes a hang out for many who come over

This time I am controlling myself and not touching and organising things in the room 🙂 My sons are controlling me! haha!! But I am quite happy that it was relatively neat 🙂 I could not help myself a bit and tried to fix Jaime’s duvet since I saw it collecting already on one side so it was not spread out evenly inside the cover so I fluffed it up a bit ( the checkered one ) 🙂 Very good! 🙂 Catching up a bit in the kitchen and dining hall of the dorm – Happy to be together!

We also got to meet the parents of Charley. Charley Dickey is already the 4th Generation in his family who has attended St. Paul’s School. Wow! 🙂 [email_link]

Track Day with JP Tuason

We went mainly to Clark to come here

I like it when my boys invite me to join their adventures so I just come to see what they do

Race car drivers practicing for the VIOS cup which was held last July 26

So happy to see Tonyboy Escalante on the track

Apparently his son is a very good race car driver and Papa Tonyboy was there watching and supporting him

JP Tuason Racing school was giving lessons that day

They provide everything including food and also the cars for practice, in this case it’s Toyota VIOS

Upstairs is a room where you can watch the race from. I wish they told me this earlier and I could have watched from here 🙂
