Vyne

There was Hyve, then Skye and now there is Vyne 🙂

Located beside Hyve.  For now they are open from 5:30 pm onwards till early morning.  Soon they will be opening for lunch

There are many partners but there were three that day we had lunch there – JP Enriquez, Denise Hui and Ferdi Salvador.  JP loves to cook so for sure he is involved in the food part of the place and Denise was instrumental in Skye and considers it her baby.  

According to them, this is a passion project for them.  They put a lot of their heart and soul into this.  They take turns and have shifts to be in the place so expect to see one of the partners during your visit.  Congratulations guys!!

I love this guy because he is so much fun to be with.  He is so funny and I love funny people 🙂  He is also of course always so stylish and so proper and has impeccable taste in everything

This place is a nice extension of Hyve and it’s nice because it is outdoors with a beautiful view

Chef Jerome is the one behind the food at Vyne.  With Chef Rob Pengson as an industrial partner, he is of course in charge of the culinary side.  He brought with him his Sous Chef from The Goose Station, Chef Jerome.  He is amazing!!  They say the food is World Fusion and expect it to be very creative.  I love creative, I love unique tastes and I love new tastes and combinations.  Aside from the menu here, they have an early morning breakfast which is for the people who stay till early in the morning.  They are considering making it an all day breakfast menu so hopefully I will get to try that too one of these days when I return

They have plenty tapas – 13 of them!  All yummy!!!  It would be nice to come over even just for tapas and drinks.  You will love them!!!

Don’t forget to squeeze the shrimp head for the juices to come out! Love this dish!

Back at The Brasserie La Boheme at the Picasso

  I am so happy to finally have a meal by Chef Dino Guingona!! We have been planning this for years! 🙂  It was worth the wait!  He’s not only a great chef, but he is also a great photographer.  Maybe one day we can feature that too 🙂  

Chef Dino is now the Executive Chef for Brasserie La Boheme.  He started out as a consultant which involves updating and standardising the menu, training the staff and just updating the restaurant overall.  He does this for a few restaurants and I keep telling him that he should just open his own restaurant 🙂  But for now, he is very busy with his culinary school, Moderne Culinaire Academy and the restaurants he is consulting for.  He told me that his passion is in teaching so for now that is what he is focusing on


The last time I was there was in 2010 so it has been 4 years!  And wow, the menu has changed a lot.  It was good back then and now the menu is even more extensive

And wow, this poster right in front is irresistible.  How can you not come in and try the food here? 🙂  I still have to try this though, a good reason to come back!

Then Dino introduced me to his Head Chef, Chef Michael Gemperle Figdor, who is apparently the cousin of a friend Stella Gemperle Aguila.   He grew up in Singapore and worked in Ireland in Gordon Ramsay at Powerscourt and in Hungary at the Bistro by the Lake and at the Ritz Carlton Beach Resort in Florida

As soon as we arrived we had two slushes – Sweet corn with cinnamon

And calamansi basil! YUM!!!  So refreshing and so good.  Even if you are just in the area by the Salcedo Market stop by here to try these refreshing drinks!

There is a page in the menu called the House of Bone Marrow.  You can order is plain or you can choose toppings for an additional P 35.00 only!

We also met John who manages the Picasso hotel.  He is part of the Hospitality International Inc group that also manages other hotels including the The Henry in Cebu which I have heard a lot about.  The Picasso boutique hotel is not the number 4 rated hotel in trip advisor after the other 5 star hotels in the city.  So they must be doing a great job 🙂

Todd English Food Hall

Around two years ago, we visited The Plaza Food Hall by Todd English at the Plaza Hotel in New York. We enjoyed very much

I was happy to hear that they were opening here in the Philippines and it will be the first Celebrity Chef Restaurant in the country!!!

Today they open to the public in Skypark in the 5th level of SM Aura!  The first 100 customers will get a whole year supply of flatbread pizza!!!

It was nice to see Chef Todd English with his son, Oliver who is only 24 years old and a graduate of Cornell University.  Not only handsome but intelligent too 🙂

Philippine partners headed by father Ricky Dee ( middle ) and sons Eric ( right ) and JR ( left).  Eric met Chef Todd English in Kuala Lumpur two years ago and after many exchanges of emails and a visit to the restaurants of Chef Todd, they finally decided to bring it t the Philippines.  Ricky Dee owns many other restaurant concepts namely Mesa, Cervezeria, Kai, Kitchen, Ebun and more.  And soon to open Tim Ho Wan!

It’s a replica of the New York Food hall designed by Ivy Almario and team.  The global architecture is reflected in the mosaic marble floors, elegant wood paneling, ceramic backdrops and stained glass windows.

This is the most expensive pasta maker in the world!  There are only three of these in the world – one in The Plaza Food Hall by Todd English in New York and one in Olive, a restaurant of Chef Todd English.  They saw it costs like a BMW, I asked which class 🙂   Well whatever it is it’s an expensive machine and Chef Todd will only turn it over the a chef until he is fully trained in using it

Chef Jaime Mendoza is the Executive Chef.  He will be the only one who will stay among the team who flew in from the USA.  He is Mexican 🙂

Marcia Adams

Margie wanted to take me to a Vietnamese place in Tagaytay called Bawai, but it was closed that day so instead I suggested Marcia Adams since this was recommended to me by my friend, Randy.  Thanks to their directions in their Facebook page, it was easy to get there.  It’s actually very easy just turn right from the rotunda and go straight till you see the Thank you Come Again sign 🙂 ( border of Tagaytay and Alfonso )   then after that turn right

 We loved the place!!!  They call themselves Tuscany in Tagaytay but for me I would like to think it’s a beautiful place in our very own country, the Philippinesmarcia-adams-4.jpeg

We heard a dog barking and apparently that was where their house was.  In the beginning they would only open their house for meals to friends and family in their house but soon after they decided to open to the public

It was a weekday so the place was quiet.  This was our table, we had the room to ourselves till a couple came and joined us, but it was relatively very private.  We had a nice time!

The food is Mediterranean according to Neil Adams, the owner and husband of Marcia 🙂  At first the menu looks complicated but it’s actually very simple.  The complicated part is us wanting to try everything on the menu! 🙂 The price of your meal will depend on the main course that you choose.  There is a minimum cover charge per person of P 700.00.  The meal comes with a choice of a starter, then the main dish and then dessert.  There are additional charges for options such as salads or if you want to add sides or for some desserts

 Neil Adams!! The owner and husband of Marcia Adams 🙂  He is also the one who bakes the bread.  He told us that he was supposed to retire but ended up working again when they opened the restaurant 🙂

I was very insistent to meet Marcia Adams and they kept telling me she was busy and she was!  She is really hands on and is the one cooking the meals in the kitchen downstairs.  I could not help it, I really asked and asked until they let me go to her and here she is!! She is such a simple and very soft spoken person!!  I told her that I loved her cooking and she told me she whispers to her food to make it taste good 🙂 More power Marcia Adams!!!
