Dinner by the Joseph Family in Massachussets (24)homestyle corn chowder

ingredients:
3 cans creamed corm
1 can whole kernel corn
2 cups water depending on how thick you want your soup to be
2 large yellow onions, diced
1 cup diced carrots
2 stalks celery stalks, diced
1/2 cup cooking cream (optional)*
2 eggs, beaten
salt and pepper
dash of sesame oil (optional)*

In a pot, put the canned corn, water, onions, diced carrots and bring to a boil. Add more water if too thick. Lower heat and simmer gently until onions and carrots are soft.
Add celery, salt and pepper to taste, cream, and lastly 2 beaten eggs. Stir gently.

*chowder will be as delicious with or without the cream.
sesame oil will change the overall taste…for those who like sesame oil add a few drops at the very end.

It was the day before Halloween and the place was nicely decorated 🙂  Breakfast at Pancake House Baguio (3)

Our trip to Baguio was really Javier’s request to Lola. Every year the kids love going to Baguio with their friends and staying in Lolo Benny’s house. They ask Lolo and Lola to take them. This trip it’s Juan, Jeff and Andrew who are Javier’s guests. Just like when we were kids we loved going to Baguio with our cousins with many fond memories. Hoping this tradition will continue for many generationsBreakfast at Pancake House Baguio (4)

Foggy Mountain Cookhouse Baguio

By | Blogs | 2 Comments

Chef Vicky Tinio told me about this place – a friend of hers who also opened up his house for dining,  It’s called Foggy Mountain House and it was really foggy 🙂  that night we went there.  We were hoping to catch the sunset at 530pm but it was really very foggy. If you do decide to come over, best to come at round 5 to 530pm for sunset and to appreciate the view. It’s a very casual and cozy place in Baguio to have a Mediterranean meal.
