We would go to Crustacean  because it’s usually easier to reserve. Tonight we are back and its newly renovated since November. It’s nice now! Back in Juban

For some reason the Kalbi ( the most basic and bestseller) which is 3$ more than the tongue is the one that’s rubbery and we had the same experience 2 years ago.Back in Juban (1)  My new favorite in Juban is the Beef Tongue. It’s tender and not rubbery, just make sure it’s the pink ones ( not the 2 dark ones on the side) Make sure it’s also well done.  Back in Juban (2)  We also had the skirt steak which is same price as the tongue and it had more flavor than the Kalbi. So it’s good to experiment once in awhile. They have a yakishabu which is thinly sliced beef and might be like a shabu shabu cut. Back in Juban (3) Back in Juban (4)

Happy to meet Head Sommelier – Rafael Santos – who is Filipino. Raphael but changed to Rafael by the Italians and Pepel was his nickname in the Philippines. 🙂 Pepel graduated from Fordham Univ and worked in the field of Finance in Wall Street, London and San Francisco for 4 years and realized that it was not for him. He became a Sommelier and has been working in Acquerello for 7 years already. Though he said that he learned to appreciate wine during his meetings in his previous job. Pepel is such a nice guy and it’s nice to know we have many common friends- one of them is Chef Tippi Tambunting of @m_dining.bar and @donosti_pintxos More power to Pepel ?
