OMG! I just tried their corn on the cob from Bad Bird and it is the best corn for me!!!  It has Japanese kewpie mayonnaise, bonito flakes and togarashi umami spices! It blends so well I LOVE IT!!  Hole in the Wall Part 2 (1)

Through Madrid Fusion Manila, DA also aims to feature our Filipino culture and diversity and to stress the value of using ingredients produced by small farmers. “We also want to reintroduce ‘slow food’ as an alternative to fast food. The increasing popularity of convenience food has made our traditional cuisine that is deeply-rooted in our culture and traditions slowly disappear. As a consequence, we use less and less of the traditional and indigenous local ingredients that makes our cuisine distinctly Filipino and mainly produced from smallholder farming,” DA Undersecretary for Special Concerns Berna Romulo Puyat added.

On April 24?26, 2015, Mall of Asia’s SMX Convention Center in Pasay City,  Madrid Fusión Manila will feature some of the most renowned 10 michelin stars chefs from Spain and other parts of the globe namely Elena Arzak, Andoni Luis Aduriz, Quique Dacosta, Ramon Frexia, Francis Paniego, Paco Roncero, Mario Sandoval, Paco Torreblanca,  André Chiang, and Alvin Leung.

Madrid Fusión Manila is a joint partnership among the Philippines’ Department of Tourism (DOT) and the Tourism Promotions Board (TPB), along with Madrid Fusión organizers Foro de Debate and Arum Estrategias de Internacionalización.

Participants in the congress will learn the latest culinary trends and techniques from the top michelin star chefs from Spain and the best chefs from the Philippines and other countries in Asia, as they talk about progressive gastronomy, technological innovation, and revolutionary techniques in cuisine.

Restaurateurs, food manufacturers, entrepreneurs in the food industry, food writers, bloggers and even foodies will benefit from the conferences and presentations lined up.

The DA booths in the three-day congress will be exhibiting champion produce from different regions of the country such as mango, coconut, pineapple and tuna. In addition, products that reflect Philippine traditions and culture such as heirloom rice, adlai, siling labuyo, batuan, tabob-tabon, kamias, kapeng barako, and criollo cacao and innovative consumer products like Destileria Limtuaco’s  Manille Liqueur that use tropical fruits such as calamansi and dalandan, coco sugar and coco honey from Coco Natura, organic rice and coffee from Fresh Start Organic will, honey from Milea Bee Farm, fresh and chilled tuna from Frabelle will also be featured.

The DA will also be sponsoring regional lunches that will exhibit finest dishes and produce from the country’s main islands—Luzon, Visayas, and Mindanao. Companies and entrepreneurs such as Farmacy, Fog city, Destileria Limtuaco, Manila Chocolates, Luna Coffee, Sebastian’s Ice Cream, Fresh Start Organic, The Chocolate Chamber, Carmen’s Best, Don Papa Rum,  Malagos Cheese and Chocolates, EDSA Beverage Design Studio, Risa’s Chocolates, Theo Philo chocolates, Farmacy and Wildflour have also volunteered to provide participants in the regional lunches with samples or tasting portions of their products.

For the regional lunches, the Luzon regional lunch will be curated by Angelo Comsti, author of Homemade for the Holidays, From Our Table to Yours and the Filipino Family Cookbook. He will be joined by Miko Aspiras of Scout’s Honor; Happy Ongpauco Tiu of Pamana and Tsokolateria; Robby Goco of Cyma and Green Pastures; Mikel Zaguirre of Locavore; Josh Boutwood of Bistro Group; and Myke Sarthou of Alab.

The Visayas regional lunch will be headed by Jj Yulo, founder of Pinoy Eats world and Just Jonesing. He will be assisted by Tony Boy Escalante of Antonio’s (recently included in Asia’s 50 Best Restaurants); JP Anglo of Sarsa; Margarita Fores of Cibo, Grace Park and Lusso; Vicente Lobaton of Enting’s of Sagay, Negros Occidental; Fernando Aracama of Aracama, Ariel Manuel of Lolo Dad’s, and Sunshine Pengson of The Goose Station and Shine Bakery.

Lastly Alicia Sy, author of EAT OUT NOW and executive editor of Town & Country magazine, contributing editor to spot.ph and Yummy Magazine will be in charge for Mindanao. The Moment Group’s first burger joint is now called 8Cuts

BurgerBar opened to much buzz and burger love in Nov 2012, being Manila’s first full service burger restaurant offering handcrafted patties and bringing a whole new level to the local burger scene. Apparently she runs Cafe Aruga which is the coffee shop of the serviced apartments. They had just opened two days ago. She told me that all the best and original dishes from Cucina Victoria is served here! She’s so masipag and has always been even when she was working in Rustan’s. The interiors were done by Butch Valdez who now works in the States and does international projects like the Peninsula Hotel in Bangkok. After lunch with Margie, we headed to our next destination – Segovia’s. Visited Segovia’s Cakes and Recipes which is the secret of the Xavier and ICA moms! They not only serve the yummy “Edu Manzano Mamon” but also yummy ensaymada, Cheese roll and other savory products like sandwiches, pasta, pork and recently bread items. I am so glad I got to meet the lady behind all the yummy things here!!! Thank you to CJ Jesena who is her cousin.  I made sure that i met her when Margie and I went to visit so I could talk to her!   The lady behind the “Edu Manzano Mamon” I featured recently.

The place is called Segovia’s Cakes & Recipes and the owner is Carmen Segovia.

Check out the goodies behind her – ensaymada, Mamon and cheese roll. She was already cooking and baking since she was Grade 3! She started her business after graduating in 1983. She is very hands on that even to the last step of wrapping the Mamon she is the one doing it. That is proof that her food is made with LOVE. Last year she found out she had cancer and she is presently undergoing radiation treatment. ????Yet when I met her yesterday she looks and sounds very happy, she’s energetic and always wanting to bake and cook. I’m so blessed to have met her. For Heart2Heart it’s always important to know the people behind a product or business. And when you know them and how much passion and LOVE they put into it, it just makes a world of difference.  The Special Segovia Mamon (“Edu Manzano Mamon) which Carmen Segovia lovingly makes herself. Everyone is telling her to teach someone in case something happens but she refused because she says it might not be the same! When she cannot bake it for some reason there will be no supply of Mamon. She used to have a sign outside the gate for the Mamon but she had to remove it because customers would get mad when they would run out! I tried it yesterday fresh and not microwaved and it was so so good!

 OMG! This is the best Chicken salad sandwich I have ever tasted in my entire life! The bread is so thick but it’s fluffy and so it’s not that filling and it’s so yummy!!!! Carmen please sell the bread on its own also for sure it will sell!!! It has slices of apple  in it and cheese.

If you have not tried it yet it’s worth trekking to Little Baguio to have it freshly made! Don’t go during school dismissal or drop off because it can get traffic in the area. School will be out soon so best time is summer time.   You can also order it as a party tray together with her other sandwiches!! She says the hot and spicy tuna sandwich is also good! Definitely made with LOVE

My date for today Margie Abary Duavit.  Our ever reliable batch mate who is so dependable and always so generous whether it be a donation or to lend a helping hand, to volunteer for anything including her house if we need a venue , volunteer to set up a relief center to pack goods for typhoon victims. Not to forget to mention that she’s the supportive wife of ex Congressman Jack Duavit .   She’s just a super trooper – so kind and full of  love. Today she set up some things for me and will even accompany me – how lucky can I be?
